  • 8 ripe peaches (yellow flesh preferred)
  • 5.3 oz. container unsweetened vanilla yogurt (So’s coconut yogurt recommended)
  • 1 can full fat coconut milk (about 13.5 oz.)
  • Juice from 1 lime
  • 1-inch piece fresh ginger, peeled
  • 1 Tbsp. amaretto liqueur (or 2 tsp almond extract)
  • 1/8 tsp. salt

For Garnish (Optional)

  • Chopped mint
  • Extra peaches, chopped

Instructions

  1. Blend Ingredients: Combine the peaches, unsweetened vanilla yogurt, full fat coconut milk, lime juice, fresh ginger, amaretto liqueur, and salt in a blender. The mixture will almost fill a 68 oz. blender, so if necessary, blend in batches to process the full recipe evenly and smoothly.
  2. Chill Soup: Transfer the blended peach mixture to a bowl or container and chill in the refrigerator for at least one hour. This resting time allows the flavors to meld and the soup to become nicely cold for serving.
  3. Serve and Garnish: Once chilled, pour the soup into bowls or glasses and garnish with chopped mint and additional chopped peaches if desired to enhance freshness and presentation.
