Ingredients
Chickpea Crackers Ingredients
- 400 g can chickpeas, rinsed and drained
- 1 cup rolled oats
- 2 cloves garlic
- 1 tablespoon lemon juice
- Salt, to taste
- ¼ cup olive oil (extra virgin preferred for flavor)
Instructions
- Prepare the Chickpeas: Rinse and drain the canned chickpeas thoroughly to remove excess liquid. This step ensures the dough will have the right consistency and prevents sogginess.
- Blend Chickpeas: Place the chickpeas into a food processor and blend until smooth. The texture should resemble playdough forming a cohesive ball that is slightly malleable.
- Add and Process Oats: Add the rolled oats to the chickpeas in the food processor and continue blending until the oats are finely chopped and fully incorporated into the mixture.
- Add Seasonings: Add the garlic cloves, lemon juice, and salt to the mixture for flavoring. Use fresh garlic for more pungency or garlic powder as a substitute if preferred.
- Incorporate Olive Oil: While blitzing the mixture, gradually pour in the olive oil and continue blending until all ingredients come together into a smooth, cohesive dough ball.
- Prepare to Roll: Line a baking tray with baking paper and place the dough ball on top. Press it down lightly with your hands to begin flattening it evenly over the tray.
- Roll Out Dough: Place a second sheet of baking paper on top of the dough. Using a rolling pin, roll the dough until it is evenly spread out to about 5mm thickness for optimal crispness.
- Score Crackers: Use a pizza cutter or knife to score the dough into cracker-shaped pieces. This will make breaking them into portions easier after baking.
- Bake the Crackers: Bake in a preheated oven at 180°C (360°F) for 40–50 minutes, or until the crackers turn golden and crisp.
- Cool Before Serving: Remove from the oven and allow the crackers to cool completely on the baking tray. This helps them set and become extra crunchy.
Notes
- Roll the cracker dough as thin as possible for a crunchier texture.
- Check crackers during baking, especially those at the edges, as they may cook faster; remove any overcooked pieces promptly.
- Serve these crackers with hummus, cheese, or your favorite dips for a tasty snack or addition to a grazing platter.
- Pricking the crackers with a fork before baking can help them bake more evenly and reduce bubbling.
- Store cooled crackers in an airtight container in the pantry for up to two weeks to maintain freshness.
- Canned chickpeas are convenient, but soaked dried chickpeas can also be used; chickpeas are also called garbanzo beans.
- Traditional rolled oats work best, but quick-cook oats are also acceptable; avoid steel-cut oats as they won’t blend properly.
- Extra virgin olive oil enhances flavor, but milder oils can be substituted if preferred.
- For garlic, fresh cloves provide more robust flavor; garlic powder can be used as a milder alternative.
