This Cheesy Keto Garlic Bread is a low-carb, gluten-free alternative to traditional garlic bread, perfect for those following a keto lifestyle. Made with almond flour and a blend of melted cheeses, it offers a rich, gooey texture and a flavorful garlic-parsley butter topping. Baked to a golden brown, this savory bread is ideal as a snack or a side for soups and salads.

  • Total Time: 35 minutes
  • Yield: 10 servings

Ingredients

Main Ingredients

  • 1 tablespoon butter (soft, for pan greasing)
  • 1 ¼ cups superfine almond flour (5 ounces)
  • 2 tablespoons Parmesan cheese (grated)
  • ½ teaspoon baking soda
  • 1 teaspoon garlic powder
  • 1½ cups mozzarella cheese (shredded, part-skim; 6 ounces)
  • 1 ounce cream cheese
  • 1 large egg (lightly beaten)

Topping

  • 2 tablespoons butter (melted)
  • 2 garlic cloves (minced)
  • 2 tablespoons parsley (minced)

Instructions

  1. Preheat and prepare the baking dish: Preheat your oven to 350°F (175°C). Generously grease an 8-inch square glass or ceramic baking dish with softened butter to prevent sticking. Alternatively, a 1.5-quart oval or similar capacity casserole dish can be used.
  2. Combine dry ingredients: In a small bowl, mix the superfine almond flour, grated Parmesan cheese, baking soda, and garlic powder until evenly combined.
  3. Melt the cheeses: Place the shredded mozzarella and cream cheese in a medium microwave-safe bowl. Microwave for 30 seconds, stir, then microwave for an additional 40 seconds until the cheeses are fully melted and smooth.
  4. Mix and knead the dough: Stir the melted cheese blend, then add the almond flour mixture and beaten egg. Use a rubber spatula initially, then knead the sticky dough quickly with your hands until uniform. This dough is sticky by design, so resist adding extra flour.
  5. Shape and bake the bread: Press the dough evenly into the prepared baking dish. Bake for about 20 minutes, until the bread is puffed and golden brown. Begin checking for doneness after 15 minutes to avoid overbaking.
  6. Prepare the garlic butter topping: While the bread bakes, combine melted butter, minced garlic, and chopped parsley in a small bowl, mixing well.
  7. Brush with garlic butter: As soon as the bread comes out of the oven and is still hot, brush it generously with the garlic butter mixture to infuse flavor and moisture.
  8. Cool and serve: Let the garlic bread cool and firm up in the pan for approximately 5 minutes. Then slice it into pieces and serve warm for the best taste and texture.

Notes

  • Use superfine almond flour for a smoother dough texture; regular almond flour may yield a denser bread.
  • Be careful not to overbake the bread to keep it moist and soft inside.
  • The dough will be sticky, which is normal; avoid adding flour to prevent dryness.
  • Leftover bread can be stored in an airtight container in the refrigerator for up to 3 days and reheated before serving.
  • For a stronger garlic flavor, increase the garlic cloves in the butter topping or add garlic powder to the dough mixture.
