Ingredients
Dip Base
- 8 oz brick full-fat cream cheese, softened to room temperature
- 1/4 cup mayonnaise
- 1/2 cup whole milk Greek yogurt
- 2 cloves garlic, finely minced or grated
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce
- Pinch of salt and pepper, to taste
Cheeses
- 4 ounces cheddar, shredded (orange)
- 4 ounces Monterey Jack cheese, shredded (or substitute white cheddar)
Vegetables and Herbs
- 4 jalapeños, seeded and diced small (reserve 1-2 tablespoons for the top)
- 1/3 cup thinly sliced green onion, plus more for garnish
Bacon
- 8 strips bacon, cooked until crisp, then drained and chopped (reserve 1-2 tablespoons for the top)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip.
- Prepare Cream Cheese Mixture: In a large mixing bowl, add the softened cream cheese and Greek yogurt. Stir together until completely smooth using a spoon or hand mixer for the best texture.
- Combine Ingredients: Add most of the chopped bacon (reserve some for topping), garlic, half of the shredded cheddar and Monterey Jack cheeses, diced jalapeños (reserving some for garnish), sliced green onion, Worcestershire sauce, hot sauce, and a pinch of salt and pepper. Mix everything thoroughly and taste to adjust seasoning if needed.
- Transfer to Baking Dish: Spoon the mixture into a 9-inch cast iron skillet or pie dish, spreading it evenly. Then sprinkle the remaining shredded cheeses, reserved chopped bacon, and diced jalapeños evenly over the top.
- Bake the Dip: Place the dish in the preheated oven and bake for 15-20 minutes, until the dip is bubbly around the edges and the cheese on top has melted and is golden.
- Garnish and Serve: Remove the dip from the oven, garnish with additional thinly sliced green onions, and serve warm with crostini, crackers, or sliced bread for dipping.
Notes
- For less heat, reduce the number of jalapeños or omit some seeds before dicing.
- If Monterey Jack cheese is unavailable, white cheddar is a great substitute.
- Bacon can be cooked in a skillet or baked in the oven on a foil-lined tray for easier cleanup.
- This dip can be made ahead and refrigerated; reheat in the oven until warmed through before serving.
- Serve with a variety of dippers such as sliced bell peppers, pita chips, or pretzels for variety.
