Ingredients
Main Ingredients
- 8 ounces cream cheese (room temperature)
- 1 tablespoon unsalted butter (room temperature)
- 2 cups powdered sugar
- 1 cup crushed graham crackers
- 1/2 teaspoon vanilla extract
Coating
- 1/2 cup crushed graham crackers
- Sprinkles (as desired)
Instructions
- Mix Ingredients: In a large mixing bowl, combine the cream cheese, butter, powdered sugar, 1 cup of crushed graham crackers, and vanilla extract. Beat on medium speed with an electric mixer until combined, making sure to scrape down the sides of the bowl with a rubber spatula. The mixture should be smooth except for the graham cracker crumbs.
- Refrigerate: Place the mixture in the refrigerator for 1 to 2 hours to harden and firm up, which will make it easier to shape into balls.
- Form Balls: Grease your hands slightly and use a 2-tablespoon cookie dough scoop to portion the mixture. Roll each portion with your hands to form smooth balls. If the mixture is too sticky or difficult to shape, incorporate more crushed graham crackers.
- Coat the Bites: Prepare two shallow bowls, one with the remaining 1/2 cup crushed graham crackers and the other with sprinkles or other desired coatings. Roll each cheesecake ball in the coatings until evenly covered.
- Serve or Store: Enjoy the cheesecake bites immediately or place them back in the refrigerator until ready to serve for best texture and freshness.
Notes
- For firmer bites, chill for the full 2 hours before shaping.
- If mixture is too sticky, gradually add more crushed graham crackers to achieve easier handling.
- Customize coatings with cocoa powder, chopped nuts, or shredded coconut for variety.
- Store bites in an airtight container in the refrigerator for up to 3 days.
- Allow bites to sit at room temperature for 5-10 minutes before serving if too firm from refrigeration.
