Ingredients

Instructions

  1. Roast the Cauliflower: Preheat your oven to 425°F and line two baking sheets with parchment paper. Spread the cauliflower florets and thinly sliced onion on the baking sheets, drizzle with olive oil, and season with salt and black pepper. Roast in the oven for 20-25 minutes until the florets are tender and have golden brown edges. Remove from the oven and let cool slightly.
  2. Cook the Bacon: Slice the bacon into 1-inch pieces and add them to a large stock pot. Cook over medium heat until crisp. Once cooked, remove the bacon bits and drain on a paper towel-lined plate. Retain about 1 tablespoon of bacon drippings in the pot, discarding the rest.
  3. Sauté the Vegetables: Add the diced carrots, celery, and minced garlic to the pot with the bacon drippings. Sauté for 5 to 8 minutes, or until the carrots become soft and the vegetables are fragrant.
  4. Combine and Blend Soup: Add the roasted cauliflower and onions to the pot. Pour in the chicken broth, canned coconut milk, Worcestershire sauce, and soy sauce. Use an immersion blender to puree the soup to your desired consistency; blend fully for a creamy texture or pulse a few times for a chunkier feel. Alternatively, you can puree the soup in batches using a blender and return it to the pot.
  5. Add Chicken and Bacon, Simmer: Stir in the shredded cooked chicken and crispy bacon bits. Bring the soup to a gentle simmer and allow it to cook for an additional 5 to 10 minutes so the flavors meld beautifully. Serve warm.
