  • 800 g Broccoli (Fresh or frozen)
  • 1 Onion (Peeled and chopped)
  • 2 Garlic cloves (Peeled and crushed)

  • 300 ml Milk
  • 160 g Stilton cheese (Grated or crumbled)
  • 40 g Stilton cheese (For garnishing, crumbled on top)
  • Croutons (To serve, optional)

Instructions

  1. Prepare the Vegetables: Wash and chop the broccoli into large chunks. Finely slice the onion and crush the garlic cloves. If using frozen broccoli, there is no need to thaw; just add everything directly to the pan.
  2. Combine Ingredients in Pan: Place the broccoli, onion, garlic, stock, and a generous pinch of salt and pepper into a large saucepan.
  3. Cook the Vegetables: Bring to a boil with the lid on, then reduce heat and simmer for 15 minutes or until the broccoli and onions are just tender.
  4. Blend the Soup: Remove the pan from heat. Stir in the milk and 160 g of Stilton cheese, then blend the soup using an immersion blender or regular blender until smooth and creamy.
  5. Reheat as Needed: Return the soup to low heat if necessary to warm through before serving.
  6. Serve: Ladle the soup into bowls and top with the remaining 40 g of crumbled Stilton cheese and optional croutons for added texture and flavor.
  7. Slow Cooker Option: Add broccoli, onion, garlic, and stock into the slow cooker. Cook on HIGH for 3-4 hours or LOW for 5-6 hours.
  8. Blend and Finish in Slow Cooker: After slow cooking, add the milk and 160 g Stilton cheese and blend the mixture until smooth.
  9. Optional Reheat: Serve immediately or for hotter soup, continue cooking on HIGH for an additional 15-30 minutes before serving.
