Ingredients

Meat

  • 6 Slices Bacon
  • 1 Pound Maple Breakfast Sausage

Egg Mixture

  • 8 Large Eggs
  • 1/4 Cup Milk
  • Salt and Pepper, to taste
  • 1 Cup Colby Jack Cheese, shredded

Bread

  • 6 Croissants, sliced open

Sauce

  • 2 Tablespoons Mayonnaise
  • 2 Tablespoons Mustard or Dijon Mustard
  • 2 Tablespoons Maple Syrup

Garnish

  • Chives, minced

Instructions

  1. Preheat Oven and Cook Bacon: Heat the oven to 420°F (215°C) and line a cookie sheet with tin foil. Lay the bacon slices evenly on the sheet and bake for 10-15 minutes until crisp, adjusting time for bacon thickness. Remove bacon to a paper towel–lined plate to drain excess fat.
  2. Prepare Sausages: Shape the maple breakfast sausage into 6 even rectangles so they fit neatly onto the croissants. Heat a skillet over medium heat and cook the sausages for 7-8 minutes on each side or until fully cooked through. Remove from heat, cover with a lid, and keep warm.
  3. Mix Egg Mixture: In a bowl, whisk together the eggs, milk, salt, pepper, and shredded Colby Jack cheese. Refrigerate the mixture until ready to cook to keep it fresh.
  4. Toast Croissants: Increase the oven temperature to broil. Place the sliced croissants open-faced on a cookie sheet and put them under the broiler just until toasted and lightly golden. Remove and set aside.
  5. Cook the Eggs: Heat a skillet over medium-high heat and spray it with cooking spray. Pour in the egg mixture and cook, stirring frequently with a rubber spatula, until the eggs are scrambled and fully cooked but still moist. Remove from heat.
  6. Prepare the Sauce: In a small bowl, whisk together mayonnaise, mustard or Dijon mustard, and maple syrup until smooth and combined.
  7. Assemble Sandwiches: Spread the maple-mustard sauce generously onto each half of the toasted croissants. Layer scrambled eggs, cooked sausage rectangles, crispy bacon, and sprinkle with minced chives. Top with the other croissant half.
  8. Serve and Enjoy: Serve the breakfast croissant sandwiches warm for a satisfying and flavorful start to your day.
