Mix-ins
- 1/2 cup drained & finely chopped maraschino cherries, plus extra for garnish
- 3/4 cup (129g) semi-sweet chocolate chips, plus extra for garnish
Instructions
- Preheat Oven: Preheat your oven to 350º F to ensure it’s ready when your cookie dough is mixed.
- Mix Butter and Sugar: In a mixing bowl, beat the room temperature butter and brown sugar together with an electric mixer for 1 minute until well combined and creamy.
- Add Egg and Vanilla: Add the egg and vanilla extract to the butter and sugar mixture, then beat again until fully incorporated.
- Combine Dry Ingredients: In a separate small bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt to evenly distribute the leavening agents and cocoa.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, folding gently by hand with a spatula. The resulting batter will be thick.
- Prepare Cherries and Chocolate Chips: Drain and finely chop the maraschino cherries, patting them dry to remove excess moisture. Fold the cherries and semi-sweet chocolate chips into the cookie dough until evenly distributed.
- Form Cookies: Use a cookie scoop to drop dough balls onto a silicone-lined baking sheet. Press additional pieces of maraschino cherries and chocolate chips onto the surface of each dough ball for garnish and extra flavor.
- Bake: Bake the cookies in the preheated oven for 13-15 minutes, or until the cookies are set but still soft to the touch.
- Cool: Allow the cookies to cool on the baking sheet for about 15 minutes to firm up, then transfer them to a cooling rack to cool completely.

- Ensure the maraschino cherries are well-drained and patted dry to prevent excess moisture from making the cookies soggy.
- Do not overbake; cookies should be soft in the center when removed from the oven.
- Using a silicone baking mat helps with even baking and easy removal of cookies.
