Ingredients
For the Tuna Steaks
- 2-4 tuna steaks
For the Marinade
- ⅓ cup olive oil
- 1 tablespoon honey
- 1 tablespoon minced garlic
- 1 tablespoon finely chopped cilantro
- 1 tablespoon finely chopped parsley
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon coarsely cracked black pepper (or ¼ teaspoon ground pepper)
- ½ teaspoon smoked paprika
- Juice of half a lemon (about 2 tablespoons)
Instructions
- Prepare the Marinade: In a bowl, combine olive oil, honey, minced garlic, chopped cilantro, chopped parsley, salt, cumin, cracked black pepper, smoked paprika, and lemon juice. Whisk vigorously to create a well-mixed marinade.
- Marinate the Tuna Steaks: Place the tuna steaks into a gallon-sized ziplock bag. Pour the marinade over the tuna, then toss and massage the bag gently to coat the steaks evenly. Press out excess air and seal the bag securely.
- Chill: Transfer the sealed bag to the refrigerator and allow the tuna to marinate for 30 minutes to absorb the flavors.
- Cook the Tuna Steaks: Preheat your grill to medium-high heat. Remove the tuna steaks from the marinade and grill them for 6-8 minutes on each side until the tuna flakes easily with a fork and the center remains just barely pink. The internal temperature should reach between 90-95°F. Alternatively, you can sear the steaks in a skillet over medium-high heat or broil them in the oven at 400°F until done.
Notes
- Marinate tuna steaks for no longer than 30 minutes to prevent the acidity from breaking down the fish too much.
- The internal temperature of tuna should ideally be 90-95°F for a medium-rare finish.
- Use fresh tuna steaks for the best texture and flavor.
- Fresh herbs like cilantro and parsley add brightness to the marinade; feel free to adjust based on preference.
- If broiling, watch closely to avoid overcooking the tuna.
- Serve immediately after cooking for optimal taste and texture.
