Instructions
- Prepare the mixed berry smoothie: In a high-speed blender, combine the fresh or frozen raspberries, strawberries, blueberries, unsweetened vanilla almond milk, dairy-free yogurt, and maple syrup. Blend until the mixture becomes creamy and smooth, resembling a smoothie consistency.
- Combine chia seeds with berry mixture: Pour the blended mixed berry milk into a large mixing bowl. Sprinkle the chia seeds evenly over the top of the liquid.
- Mix chia seeds thoroughly: Use a fork to stir the chia seeds into the berry milk, ensuring they are well incorporated and begin to hydrate evenly.
- Allow seeds to absorb liquid at room temperature: Leave the mixture at room temperature, leaving the fork in the bowl for easy stirring. Every 5 minutes, stir the pudding again for 15 to 20 minutes to evenly distribute the chia seeds and prevent them from settling at the bottom.
- Chill to set the pudding: Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 3 to 4 hours or overnight. This chilling process allows the chia seeds to fully absorb the liquid and thicken into a pudding-like consistency.
- Serve: Before serving, stir the pudding once more to ensure even texture. Garnish with additional coconut yogurt and fresh mixed berries if desired. Enjoy chilled for a refreshing and healthy treat.
