These BBQ Chicken Skewers are a flavorful and colorful grilled dish perfect for a quick weeknight dinner or a weekend barbecue. Grilled to juicy perfection and brushed with olive oil, these skewers deliver a delightful smoky taste and make a great crowd-pleaser for 8 servings.

  • Total Time: 30 minutes
  • Yield: 8 servings

Ingredients

BBQ Seasoning Mix

  • ¼ cup chili powder
  • 1 tablespoon paprika
  • ½ teaspoon ground thyme
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
  • ¼ teaspoon cayenne pepper (or less for a milder flavor)
  • 1 tablespoon brown sugar

Main Ingredients

  • 2 boneless chicken breasts, cut into cubes
  • 3 green peppers, cut into thick pieces
  • 3 red peppers, cut into thick pieces
  • 1 large onion, cut into thick pieces
  • 10-12 skewers (soaked for at least 30 minutes if wooden)
  • 2 tablespoons olive oil

Instructions

  1. Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes or overnight to prevent burning during grilling.
  2. Prepare BBQ Seasoning: In a small bowl, combine chili powder, paprika, ground thyme, salt, garlic powder, black pepper, cumin, cayenne pepper, and brown sugar. Mix thoroughly to create the BBQ seasoning mix.
  3. Season Chicken: Coat the chicken cubes evenly with the BBQ seasoning mix. Let them marinate for 10 minutes to absorb the flavors.
  4. Assemble Skewers: Thread the skewers by alternating pieces of chicken, green peppers, red peppers, and onions. Fill the skewers about halfway, using approximately 3-4 pieces of each ingredient per skewer.
  5. Preheat Grill: Heat your grill to 400º Fahrenheit to ensure a hot cooking surface for even grilling.
  6. Grill Skewers: Place the skewers on the grill and cook for 10-15 minutes. Brush the skewers several times with olive oil to keep them moist and flavorful. Turn the skewers occasionally to cook all sides evenly. Grill until the internal temperature of the chicken reaches 165ºF.
  7. Serve: Remove skewers from the grill and serve warm for a delicious and smoky barbecue experience.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • Adjust the cayenne pepper amount to control the spice level.
  • Use a meat thermometer to ensure chicken is safely cooked.
  • Vegetables can be swapped or added according to preference.
  • Olive oil brushing keeps ingredients moist and adds flavor during grilling.
  • If you don’t have a grill, these skewers can also be cooked under a broiler or on a grill pan stovetop.
