Ingredients
Doughnut Batter
- 1 cup (120 g) all purpose flour (spooned and leveled)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (60 ml) vegetable oil
- 1/4 cup (57 g) sour cream or Greek yogurt
- 1 teaspoon vanilla extract
- 1/2 cup diced fresh strawberries
Strawberry Glaze
- 1 cup (113 g) powdered sugar
- 2 tablespoons crushed fresh strawberries (about 3 strawberries)
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (177°C). Grease two doughnut pans using cooking spray or butter to ensure the doughnuts don’t stick.
- Mix Dry Ingredients: In a medium bowl, whisk together the all purpose flour, baking powder, baking soda, and salt. Set this mixture aside.
- Mix Wet Ingredients: In a large bowl, whisk the egg, granulated sugar, vegetable oil, sour cream, and vanilla extract until well combined and smooth.
- Combine Ingredients: Using a wooden spoon or spatula, stir the flour mixture into the wet ingredients until just combined. Be careful not to overmix to keep the doughnuts tender.
- Fold in Strawberries: Gently fold in the diced fresh strawberries until evenly distributed in the batter.
- Fill Doughnut Pans: Spoon or pipe the batter into the prepared doughnut pans, filling each cavity about two-thirds full to allow room for rising.
- Bake: Bake the doughnuts in the preheated oven for 13 to 15 minutes or until golden brown and a toothpick inserted comes out clean. Let them cool in the pan for 5 minutes.
- Cool Completely: Transfer the doughnuts to a wire rack and allow them to cool completely before glazing.
- Prepare Glaze: In a small bowl, mix the powdered sugar with the crushed fresh strawberries until you get a thick glaze that slowly drips off the spoon in a thick ribbon.
- Glaze Doughnuts: Dip each cooled doughnut halfway into the strawberry glaze, allowing excess glaze to drip off. Place them back on the cooling rack and let the glaze set for about 10 minutes before serving.
