Sweet Potatoes
- 4 medium sweet potatoes
- 1 Tbsp. olive oil
Vegetables and Seasonings
- 1/2 cup white onion, diced
- 1/2 red bell pepper, seeded and diced
- 2 cloves garlic, minced
- 1 tsp. red pepper chili flakes
- 3/4 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. dried oregano
- 1/4 tsp. salt, or more as desired
Protein
- 1 lb. (16 oz.) ground turkey
Other Ingredients
- 1 (14 oz.) can petite diced tomatoes in juice
- 1 avocado (halved, seeded, and diced)
- 1/4 cup cheddar cheese (or white cheddar), grated (optional)
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the sweet potatoes.
- Cook the sweet potatoes: Pierce each sweet potato several times with a fork. Place them on a baking sheet lined with aluminum foil and bake for about 45 minutes until they are soft and tender when pierced with a fork. Alternatively, you can microwave pierced sweet potatoes wrapped in a paper towel for about 10 minutes, adjusting time based on their size.
- Sauté aromatics and spices: While the sweet potatoes are baking, heat olive oil in a deep skillet over medium heat. Add diced onions, bell peppers, and minced garlic, cooking for about 5 minutes until tender. Stir in red pepper chili flakes, cumin, garlic powder, oregano, and salt, combining well with the vegetables.
- Cook the ground turkey: Add the ground turkey to the skillet and cook, stirring and breaking it up with a spoon, until no longer pink, about 3 to 5 minutes. Then stir in the canned diced tomatoes with juice.
- Simmer: Reduce the heat to low, cover the skillet, and let the mixture cook for 10 to 15 minutes to meld the flavors.
- Assemble the stuffed sweet potatoes: Remove the cooked sweet potatoes from the oven and slice them lengthwise just until they open. Spoon the turkey mixture into each sweet potato. Top with grated cheddar cheese and diced avocado as desired.
- Alternative serving option: If preferred, scoop the sweet potato flesh into a bowl and mix with the turkey filling to create a stuffed sweet potato bowl instead of eating from the potato itself. Enjoy immediately.
