Instructions
- Toast the Bread: Heat a stainless steel pan over medium heat and add a swish of olive oil. Add the slice of sourdough bread, coating both sides lightly with the oil. Fry the bread for 1-2 minutes on each side until golden brown and toasted. Alternatively, spread mayo on both sides and use nonstick spray instead of olive oil for a different variation.
- Prepare the Avocado Mash: Smash the avocado in a bowl, then add a squeeze of lime or lemon juice and a generous pinch of salt. Mix well until creamy and smooth.
- Cook the Eggs: Prepare the eggs according to your preference. For medium to hard-boiled eggs using an air fryer, place eggs in the air fryer basket and cook at 250°F (about 120°C) for 15 minutes for medium-boiled or 18 minutes for hard-boiled eggs. Immediately plunge eggs into ice water to stop cooking and make peeling easier. Season with salt and pepper. Alternatively, fry, scramble, or poach the eggs on the stovetop.
- Assemble the Toast: Spread the avocado mash evenly over the toasted sourdough. Top with cottage cheese, followed by your cooked eggs. Garnish with your choice of microgreens, green onions, chili crunch or bagel seasoning, a drizzle of honey, flaky sea salt, and any other preferred toppings like thinly sliced tomatoes or pickled red onions. Optionally, add a balsamic glaze for extra flavor.
