Artichoke Lemon Hummus is a zesty and creamy twist on the classic hummus recipe, combining garbanzo beans, tangy lemon juice, roasted garlic, and artichoke hearts. This quick and easy recipe yields a refreshing dip perfect for serving with pita bread or fresh vegetables, bringing a vibrant flavor and delightful texture to any snack or appetizer spread.

  • Total Time: 45 minutes
  • Yield: 1 serving

Ingredients

Hummus Base

  • 1 can garbanzo beans (drained)
  • 2 cloves roasted garlic (or raw garlic, if preferred)
  • 2 large lemons (juiced)
  • 1 teaspoon salt
  • 2 Tablespoons tahini paste (optional)
  • 1 cup artichoke hearts (jarred), chopped and separated into 3/4 cup and 1/4 cup portions
  • 2 Tablespoons extra virgin olive oil (or oil from artichoke jar)

Instructions

  1. Roast Garlic: If not using pre-roasted garlic, place garlic cloves with skin on in a nonstick skillet and heat over medium-low heat. Roast the cloves for about 40 minutes, turning them every 10-15 minutes to ensure even roasting. Remove from heat and allow to cool.
  2. Peel Garlic: Once garlic is cool enough to handle, peel off the skins from the cloves carefully to reveal the softened roasted garlic inside.
  3. Blend Ingredients: Combine garbanzo beans, roasted garlic, lemon juice, salt, tahini paste, 3/4 cup of the chopped artichoke hearts, and olive oil in a food processor. Process the mixture for 10-15 seconds or until smooth. If the hummus seems too thick, add water one tablespoon at a time and blend briefly until the desired consistency is achieved. Taste and adjust seasoning as needed.
  4. Add More Artichoke: Transfer the hummus to a bowl using a spatula and gently fold in the remaining 1/4 cup chopped artichoke hearts for extra texture and flavor.
  5. Refrigerate: For best flavor, refrigerate the hummus for at least one hour before serving. Serve chilled with pita bread or an assortment of fresh vegetables.

Notes

  • Roasting garlic enhances its flavor and mellows its sharpness, but raw garlic can also be used for a more pungent taste.
  • Adjust the lemon juice to your preference for acidity and brightness.
  • Tahini paste is optional but adds a traditional creamy richness to the hummus.
  • Adding water gradually helps achieve a smooth, spreadable consistency without diluting the flavor.
  • Leftover hummus keeps well in an airtight container in the refrigerator for up to 3 days.
