Instructions

  1. Cook the Bacon: Place the diced bacon in a cold large skillet. Turn the heat to medium and cook until the bacon becomes crispy. Once cooked, push the bacon to one side of the pan without removing it to retain the rendered fat for flavor.
  2. Sauté the Onion: Add the finely diced onion to the empty side of the pan and cook for about 3–4 minutes until softened and translucent, which builds a sweet, savory base.
  3. Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, releasing its aroma without burning.
  4. Soft Scramble the Eggs: Push the cooked bacon, onion, and garlic to the sides of the pan to create space in the center. Crack the eggs into the center and season lightly with salt. Cook gently, stirring occasionally, until the eggs are softly scrambled and tender, not dry.
  5. Mix in Rice: Add the cold cooked rice to the skillet, tossing to combine and break up any clumps. Cook until the rice is heated through evenly. Season with salt and black pepper to taste.
  6. Add Herbs and Batata Palha: Stir in 1 cup of batata palha, chopped parsley, and sliced green onions. Toss everything thoroughly to blend flavors and textures.
