Ingredients
Apples
- 4 medium apples, peeled, cored, and chopped or sliced
Filling
- ⅓ cup granulated sugar
- 3 tablespoons water
- 2 tablespoons butter
- 1 teaspoon cinnamon
Thickening Mixture
- 4 teaspoons cornstarch
- 2 tablespoons water
Instructions
- Prepare the apples: Peel, core, and chop or slice 4 medium apples according to your preference for the filling consistency.
- Melt butter with cinnamon: In a pan over medium heat, melt 2 tablespoons of butter and stir in 1 teaspoon of cinnamon to infuse the butter with warm spice flavor.
- Add apples, sugar, and water: Stir in the prepared apples along with ⅓ cup granulated sugar and 3 tablespoons water. Mix well to coat the apples.
- Cook apples until slightly softened: Cover the pan and cook the mixture for 4-6 minutes, stirring occasionally, until the apples become very slightly softened but still hold some firmness.
- Mix and add cornstarch slurry: In a small dish, combine 4 teaspoons cornstarch with 2 tablespoons water, stirring to make a smooth slurry. Add this to the pan while stirring continuously.
- Thicken the filling: Continue cooking the mixture, stirring frequently until the apples are soft but not mushy and the filling has thickened to a desirable consistency.
- Finish and cool: Let the filling bubble for about 1 minute to ensure thickening is complete. Remove from heat and allow to cool before using as desired.
Notes
- Use firm apples like Granny Smith or Honeycrisp for best texture.
- You can adjust cinnamon to taste or add a pinch of nutmeg for extra warmth.
- Allow filling to cool completely before adding to pie crust to prevent sogginess.
- If the filling is too thick once cooled, stir in a little water to loosen.
