Ingredients
Cookie Dough
- 1/2 cup butter (at room temperature)
- 3/4 cup brown sugar (light or dark)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 and 1/4 cups all-purpose flour
- 1 and 1/4 cups old-fashioned rolled oats
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup peeled and finely chopped apple (1/4-inch cubes or smaller)
- 2 teaspoons lemon juice
Maple Glaze
- 2/3 cup powdered sugar
- 2 teaspoons milk
- 2 teaspoons maple syrup
Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper or silicone baking mats for easy cleanup and to prevent sticking.
- Cream Butter and Sugar: Using an electric mixer on high speed, cream together the butter and brown sugar until the mixture is light and fluffy. Add the egg and vanilla extract, scrape down the bowl sides, and mix well until fully combined.
- Add Dry Ingredients: Sprinkle the flour, rolled oats, ground cinnamon, baking soda, ground cloves, and salt over the mixture. Mix on low speed just until the ingredients are evenly incorporated.
- Prepare Apples: Toss the finely chopped apples with lemon juice gently to prevent browning. Add the apples to the cookie dough mixture and stir gently to combine without crushing the pieces.
- Form Cookies: Using a spoon or cookie scoop, portion out the dough into rounds about 2 tablespoons each. Place them on the prepared baking sheets, spaced slightly apart, and gently flatten each cookie.
- Bake Cookies: Bake for 12 to 14 minutes until the tops are set and edges turn a light golden brown. Allow the cookies to cool for 5 to 10 minutes on the baking sheets before transferring them to a wire rack to cool completely.
- Make Maple Glaze: In a small bowl, whisk together the powdered sugar, milk, and maple syrup until smooth. Adjust the consistency by adding more syrup or powdered sugar if needed.
- Glaze Cookies: Drizzle the maple glaze over the cooled cookies using a spoon. Set the cookies aside without stacking until the glaze has set completely.
Notes
- Use firm apples like Granny Smith or Honeycrisp for best texture and flavor.
- Ensure apples are finely chopped to avoid soggy cookies.
- Lemon juice prevents the apples from browning and adds a subtle tang.
- The glaze is optional but adds extra sweetness and a lovely finish.
- Store cookies in an airtight container for up to 5 days.
