These Antipasto Skewers are a vibrant and flavorful appetizer featuring marinated mozzarella balls, juicy cherry tomatoes, tangy olives, tender cheese tortellini, artichokes, roasted red peppers, and savory salami. Perfectly assembled on skewers, they are easy to prepare ahead and ideally served chilled, making them a great option for parties or gatherings.

  • Total Time: 2 hours 30 minutes
  • Yield: 12 servings

Ingredients

Cheese & Dairy

  • 12 mozzarella balls (cocktail sized)
  • 24 refrigerated cheese tortellini

Vegetables & Antipasti

  • 12 cherry tomatoes
  • 12 pitted olives
  • 12 marinated artichokes
  • 12 slices roasted red pepper (about 1″ each)

Meat

  • 24 slices salami (or substitute half for Mortadella)

Dressings & Garnishes

  • 5 tablespoons Italian dressing (divided)
  • Balsamic reduction (for garnish, optional)
  • Chopped fresh parsley or basil (for garnish, optional)

Instructions

  1. Marinate Mozzarella: Combine the cocktail-sized mozzarella balls with 2 tablespoons of Italian dressing in a bowl. Cover and refrigerate, allowing them to marinate for at least 2 hours or preferably overnight to absorb the flavors.
  2. Cook and Marinate Tortellini: Meanwhile, cook the refrigerated cheese tortellini according to the package instructions. Once cooked, drain thoroughly and rinse under cold water to stop further cooking. Toss the tortellini with the remaining Italian dressing and allow them to marinate for about 1 hour in the refrigerator.
  3. Assemble Skewers: Begin threading the ingredients onto 6-inch wooden skewers, alternating between colors and textures for visual appeal and balanced flavor. Include marinated mozzarella balls, cherry tomatoes, olives, artichokes, roasted red pepper slices, tortellini, and salami slices.
  4. Chill and Garnish: After assembling, cover the skewers and refrigerate for up to 24 hours to let the flavors meld. Just before serving, sprinkle with chopped fresh parsley or basil and optionally drizzle with balsamic reduction for an extra touch of sweetness and acidity.

Notes

  • The skewers can be prepared a day in advance and kept refrigerated, making them ideal for parties or entertaining.
  • If you prefer, substitute half the salami slices with mortadella for variety.
  • Use cocktail-sized mozzarella balls (bocconcini) for best texture and presentation.
  • Balsamic reduction adds a beautiful glaze and flavor but is optional according to preference.
  • Ensure the tortellini is well-drained and cooled to prevent sogginess on the skewers.
