Ingredients
Truffle Filling
- 8 ounces (227 grams) full-fat cream cheese, at room temperature
- 1/4 cup (57 grams) unsalted butter, at room temperature
- 1/4 cup (57 grams) coconut oil, solid but soft enough to scoop
- 7 1/2 cups (848 grams) confectioners’ sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 12 ounces (340 grams) sweetened shredded coconut
- 48 whole almonds
Chocolate Coating
- 20 ounces milk chocolate, chopped
- 1 tablespoon (14 grams) coconut oil
Instructions
- Prepare the almond truffle filling: Line a large baking sheet with parchment paper and set aside. In the bowl of a stand mixer fitted with the paddle attachment, combine cream cheese, butter, and coconut oil. Beat on medium speed, scraping the bowl as needed until well combined.
- Add confectioners’ sugar: Reduce the mixer speed to low and gradually add the confectioners’ sugar, about 1 cup at a time, to avoid a sugar cloud. Once fully incorporated, increase speed to medium and mix in salt, vanilla extract, and almond extract until evenly combined.
- Incorporate shredded coconut: Add the sweetened shredded coconut and beat until fully incorporated, scraping the bowl occasionally to ensure even mixing.
- Chill the mixture: Place the bowl in the refrigerator for exactly 1 hour to firm up the mixture, making it easier to shape.
- Form truffles: Remove the chilled mixture, scoop heaping tablespoon-sized portions, and roll each into a ball. Press one whole almond onto the top of each ball. Place the truffles on the prepared parchment-lined baking sheet.
- Freeze the truffles: Cover the baking sheet lightly with plastic wrap and freeze the truffles for 1 hour to solidify before dipping.
- Prepare the chocolate coating: Fill a saucepan about one-third full with water and bring to a simmer over moderate heat. Place a heatproof bowl over the pan, ensuring the bowl doesn’t touch the water. Reduce heat to low.
- Melt the chocolate and coconut oil: Add chopped milk chocolate and coconut oil to the bowl. Stir occasionally with a silicone spatula until completely melted and smooth. Remove the bowl carefully, avoiding any water contact with the chocolate.
- Dip the truffles: Using a fork or candy dipper, dip each truffle fully into the melted chocolate. Lift to allow excess chocolate to drip back into the bowl, then transfer the dipped truffle to the parchment-lined baking sheet. Optionally, press another almond on top of the wet chocolate and sprinkle with sea salt.
- Set and store: Allow the chocolate to set completely at room temperature or in a cool place. Once set, store the truffles in an airtight container in the refrigerator for up to 5 days.
- Serve: When ready to serve, place each truffle in a small truffle wrapper or arrange them elegantly on a serving platter.
Notes
- Ensure cream cheese and butter are softened to room temperature for a smooth batter.
- Gradually adding confectioners’ sugar prevents a mess and ensures smooth incorporation.
- Chilling the mixture and freezing the formed truffles before dipping helps maintain shape during dipping.
- Use a double boiler setup to gently melt chocolate without burning or water contamination.
- Store truffles refrigerated to keep the cream cheese fresh and chocolate coating firm.
- Optionally, sprinkle sea salt on the dipped truffles for a flavor contrast that enhances the sweetness.
