Ingredients
Vegetables
- 1 yellow squash
Seasonings and Coatings
- 1/2 tsp salt
- 1/4 cup flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 3/4 cup panko breadcrumbs
Wet Ingredients
- 1 egg
- 1/8 cup milk
Instructions
- Slice the squash: Slice the yellow squash into 1/4 inch thick rounds, discarding the very top and bottom ends.
- Salt the squash: Place the sliced squash in a bowl and sprinkle with 1/2 tsp salt. Toss well to combine and lightly season the slices.
- Prepare the flour mixture: In one bowl, combine 1/4 cup flour with 1/2 tsp garlic powder and 1/2 tsp onion powder. Stir until evenly mixed.
- Make the egg wash: In another bowl, whisk together 1 egg and 1/8 cup milk to create a smooth egg wash.
- Set up the panko bowl: Pour 3/4 cup panko breadcrumbs into a third bowl, ready for coating.
- Coat the squash slices: Dip each squash slice first into the seasoned flour mixture, ensuring it is fully coated. Then dip into the egg wash, followed by pressing into the panko breadcrumbs to maximize adhesion. Repeat for all slices.
- Air fry the squash: Arrange the coated squash slices in a single layer inside the air fryer basket. Cook at 400°F (204°C) for 8 to 10 minutes until crispy and golden brown.
- Serve immediately: Remove the crispy squash from the air fryer and serve hot. Repeat the cooking process if more squash remains.
Notes
- For extra crispiness, consider lightly spraying the coated squash slices with cooking spray before air frying.
- Ensure the slices are arranged in a single layer without overlapping to allow even cooking.
- You can substitute yellow squash with zucchini if preferred.
- This recipe serves 2, but quantities can be scaled up as needed.
- Keep an eye on cooking time as air fryer models may vary slightly.
