Ingredients
Carrots
- 2 pounds carrots (peeled if desired), diced into 1/2-3/4 inch pieces (about 7 cups)
Seasoning
- 1 tablespoon olive oil
- 1 tablespoon freshly chopped rosemary
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Prep your carrots: Rinse the carrots thoroughly to remove any dirt or debris. If you prefer, peel the carrots to remove their skin, ensuring you still have 2 pounds after peeling. Dice the carrots into evenly sized pieces, about 1/2 to 3/4 inch chunks, for consistent cooking.
- Mix the ingredients: Place the diced carrots in a large mixing bowl. Add the olive oil, freshly chopped rosemary, dried oregano, dried thyme, salt, and pepper. Toss everything together well to ensure the carrots are evenly coated with the oil and herbs, infusing them with wonderful flavor.
- Cook in the air fryer: Transfer the seasoned carrots to the air fryer basket, making sure to include all the seasoning from the bowl. Spread the carrots evenly in the basket; they can overlap slightly. Set the air fryer to 400°F and cook for 13 minutes. After this initial cooking time, remove the basket and shake well to redistribute the carrots for even browning. Return the basket to the air fryer and cook for an additional 10 to 15 minutes, depending on your preferred crispiness and tenderness, until the carrots are tender and slightly browned on the outside.
- Serve and enjoy: Once cooked, transfer the carrots to a serving dish. If desired, garnish with freshly chopped parsley for color and added freshness. Serve warm as a flavorful and healthy side dish.
Notes
- Peeling carrots is optional, but ensure the total weight remains 2 pounds after peeling.
- Cooking time may vary depending on your air fryer model and how crispy you want the carrots.
- Shaking the basket halfway through cooking helps promote even browning and tenderness.
- Fresh herbs can substitute dried herbs but adjust quantities accordingly.
- Try serving these carrots with a sprinkle of parmesan or a squeeze of lemon juice for extra flavor.
