Ingredients
2 medium zucchinis (or 1 pack of pre-grated zucchini)
2 fresh eggs
1 cup flour
1 garlic clove, minced
3 tbsp fresh herbs (parsley, chives, dill, or a mix)
Olive oil for frying
Salt and pepper, to taste
Optional: 1–2 tbsp grated Parmesan
Instructions
- Grate the zucchini or use pre-grated zucchini.
- Place in a colander, sprinkle with salt, and let rest for 25–30 minutes.
- Rinse, then wrap in a clean towel and squeeze firmly to remove excess water.
- Transfer to a mixing bowl and add flour, eggs, herbs, garlic, salt, and pepper. Mix well.
- If mixture is too wet, add a little extra flour.
- Heat olive oil in a skillet.
- Spoon 1–2 tablespoons of mixture into the pan, pressing lightly to form fritters.
- Cook for about 5 minutes per side, until golden brown.
- Serve hot.
Notes
- Squeeze zucchini well to prevent soggy fritters.
- Add Parmesan cheese for extra richness.
- For a lighter option, bake instead of frying.
- Pair with yogurt dip or tzatziki for freshness.
- Best enjoyed fresh but can be reheated in the oven.
