Ingredients
For the Blistered Tomatoes
- 2 1/2 cups cherry tomatoes
- 5 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp salt
- 1 tsp pepper
- pinch of cumin
- 2 sprigs fresh thyme
For the Whipped Feta
- 8 oz light cream cheese (full fat cream cheese works too)
- 200 grams light feta
- 1/4 cup water
- 2 1/2 tbsp honey
- 1 tsp pepper
- 1/2 tsp salt
- 1/2 lemon, zested
Instructions
- Preheat the oven: Preheat your oven to 450°F (230°C) to prepare for roasting the tomatoes.
- Prepare the blistered tomatoes: In an oven-safe dish, combine cherry tomatoes, minced garlic, olive oil, honey, salt, pepper, cumin, and fresh thyme sprigs. Toss everything together to coat evenly.
- Roast the tomatoes: Place the dish in the oven and roast for 20 minutes, until the tomatoes are blistered and slightly caramelized, releasing their juices and concentrating their flavor.
- Make the whipped feta dip: While tomatoes roast, combine cream cheese, light feta, water, honey, pepper, salt, and lemon zest in a food processor, blender, or use a hand mixer. Blend until the mixture is smooth, creamy, and well incorporated.
- Assemble and serve: Spread the whipped feta onto a serving plate or bowl. Spoon the blistered tomatoes over the top, including any pan juices. Serve immediately with crostini, crackers, or sliced baguette for dipping.
Notes
- You can use full-fat cream cheese instead of light for a richer flavor and creamier texture.
- Adjust the honey amounts to taste if you prefer a sweeter or less sweet dip.
- Use fresh herbs like thyme for maximum flavor, but dried herbs can be substituted if needed.
- This dip is best served fresh but can be refrigerated for up to 2 days; bring to room temperature before serving.
