Ingredients

  • 2 sprigs fresh thyme

For the Whipped Feta

  • 8 oz light cream cheese (full fat cream cheese works too)
  • 200 grams light feta
  • 1/4 cup water
  • 2 1/2 tbsp honey
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1/2 lemon, zested

Instructions

  1. Preheat the oven: Preheat your oven to 450°F (230°C) to prepare for roasting the tomatoes.
  2. Prepare the blistered tomatoes: In an oven-safe dish, combine cherry tomatoes, minced garlic, olive oil, honey, salt, pepper, cumin, and fresh thyme sprigs. Toss everything together to coat evenly.
  3. Roast the tomatoes: Place the dish in the oven and roast for 20 minutes, until the tomatoes are blistered and slightly caramelized, releasing their juices and concentrating their flavor.
  4. Make the whipped feta dip: While tomatoes roast, combine cream cheese, light feta, water, honey, pepper, salt, and lemon zest in a food processor, blender, or use a hand mixer. Blend until the mixture is smooth, creamy, and well incorporated.
  5. Assemble and serve: Spread the whipped feta onto a serving plate or bowl. Spoon the blistered tomatoes over the top, including any pan juices. Serve immediately with crostini, crackers, or sliced baguette for dipping.
