Ingredients

Cooking spray

½ pound breakfast sausage

1 small onion, diced

½ cup milk

5 large eggs

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon garlic powder

¼ teaspoon ground black pepper

1 (12-ounce) package shredded Cheddar cheese, divided

1 (16-ounce) package frozen Tater Tots (bite-sized potato nuggets)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 2-quart baking dish with cooking spray.
  2. In a skillet over medium-high heat, cook sausage and onion until browned and crumbly, 5–7 minutes. Drain and cool slightly.
  3. In a mixing bowl, whisk together milk, eggs, onion powder, salt, garlic powder, and black pepper.
  4. Spread the sausage mixture evenly in the prepared dish. Pour egg mixture on top.
  5. Layer half of the Cheddar cheese over the eggs, then arrange the frozen Tater Tots in an even layer on top. Cover with aluminum foil.
  6. Bake for 40 minutes. Remove foil, top with remaining cheese, and bake uncovered for 20 minutes more until cheese is melted and casserole is bubbling.
  7. Let rest for 5 minutes before serving.

  • To make ahead, assemble the casserole, cover tightly, and refrigerate overnight. Bake as directed the next morning.
