½ pound breakfast sausage
1 small onion, diced
½ cup milk
5 large eggs
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 (12-ounce) package shredded Cheddar cheese, divided
1 (16-ounce) package frozen Tater Tots (bite-sized potato nuggets)
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a 2-quart baking dish with cooking spray.
- In a skillet over medium-high heat, cook sausage and onion until browned and crumbly, 5–7 minutes. Drain and cool slightly.
- In a mixing bowl, whisk together milk, eggs, onion powder, salt, garlic powder, and black pepper.
- Spread the sausage mixture evenly in the prepared dish. Pour egg mixture on top.
- Layer half of the Cheddar cheese over the eggs, then arrange the frozen Tater Tots in an even layer on top. Cover with aluminum foil.
- Bake for 40 minutes. Remove foil, top with remaining cheese, and bake uncovered for 20 minutes more until cheese is melted and casserole is bubbling.
- Let rest for 5 minutes before serving.
Notes
- To make ahead, assemble the casserole, cover tightly, and refrigerate overnight. Bake as directed the next morning.
- You can substitute cooked bacon or ham for sausage.
- Add veggies like bell peppers or mushrooms for extra flavor and color.
- Serve with hot sauce, salsa, or sour cream for added flavor.
