These chorizo and goat cheese tartlets are a savory-sweet delight, pairing smoky, spicy chorizo with tangy goat cheese in a crisp pastry shell. Easy to prepare yet elegant enough for entertaining, they can be served hot, warm, or at room temperature with an optional honey drizzle for extra flair.

Ingredients

1 sheet puff pastry or shortcrust pastry

100 g chorizo (mild or spicy)

150 g goat cheese (log or fresh)

2 eggs

200 ml heavy cream

Salt and black pepper, to taste

1 tbsp honey (optional)

Fresh basil or arugula, for garnish

Instructions

  1. Preheat oven to 180°C (350°F). Grease tartlet molds.
  2. Roll out the pastry on a floured surface and cut into circles to fit the molds. Press into molds and prick bottoms with a fork.
  3. Slice chorizo into small rounds or dice, and slice goat cheese thinly.
  4. In a bowl, whisk together eggs, cream, salt, and pepper.
  5. Arrange chorizo pieces in each pastry shell, top with goat cheese slices, then pour the egg-cream mixture over.
  6. Bake for 20–25 minutes until golden and set.
  7. Let cool slightly before unmolding. Optionally, drizzle with honey and garnish with basil or arugula before serving.

Notes

  • Make vegetarian by replacing chorizo with sun-dried tomatoes, roasted peppers, or caramelized onions.
  • Try different cheeses like feta, blue cheese, or mozzarella.
  • Use phyllo dough instead of puff pastry for a lighter base.
