This refreshing Strawberry Soup is a creamy, chilled dessert perfect for warm days. Made with a blend of thawed frozen strawberries, heavy cream, sour cream, and yogurt, it offers a smooth, luscious texture with a bright strawberry flavor. Sweetened to taste and garnished with fresh strawberries, whipped cream, and mint leaves, this easy no-cook recipe serves as a delightful and elegant treat.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 2 pounds frozen strawberries
  • 16 ounces heavy cream
  • 2 ounces sour cream
  • 3 ounces plain yogurt (vanilla or strawberry)
  • 2 tablespoons sweetener of choice (granulated sugar, honey, maple sweetener, etc.)

For Garnish

  • ½ pound fresh strawberries (tops removed, sliced)
  • Whipped cream
  • Fresh mint leaves

Instructions

  1. Defrost the strawberries: Place the 2 pounds of frozen strawberries in the refrigerator overnight or until they are completely thawed, allowing the berries to soften and release their natural juices.
  2. Blend the base mixture: Add the defrosted strawberries and their juices to a blender. Then add 16 ounces heavy cream, 2 ounces sour cream, and 3 ounces plain yogurt. Blend everything until completely smooth, stopping occasionally to scrape down the sides of the blender for even mixing.
  3. Sweeten to taste: Gradually add 2 tablespoons of your chosen sweetener in small increments to the blended mixture. Blend after each addition and taste, repeating the process until achieving your preferred sweetness level.
  4. Chill the soup: Transfer the blended strawberry mixture into the refrigerator and chill it for about 30 minutes or until it’s cold and refreshing.
  5. Prepare to serve: Once chilled, take the blender out of the refrigerator and shake it well to reincorporate any separated ingredients. Then, pour the chilled soup evenly into serving bowls.
  6. Add fresh toppings and garnish: Divide the ½ pound of fresh sliced strawberries among the bowls. Optionally, garnish each serving with a dollop of whipped cream and fresh mint leaves for extra flavor and presentation. Serve immediately while cold.

Notes

  • Use plain yogurt with vanilla or strawberry flavor for subtle sweetness and complementary taste.
  • Sweetener type can be adjusted based on dietary preferences – sugar, honey, or maple syrup all work well.
  • For a lighter version, substitute heavy cream with light cream or use more yogurt.
  • Ensure strawberries are thoroughly thawed to blend smoothly and release maximum flavor.
  • Chilling the soup improves the flavor and texture, making it more refreshing.
  • Can be prepared a day ahead and kept refrigerated covered for easy entertaining.
