Instructions
- Defrost the strawberries: Place the 2 pounds of frozen strawberries in the refrigerator overnight or until they are completely thawed, allowing the berries to soften and release their natural juices.
- Blend the base mixture: Add the defrosted strawberries and their juices to a blender. Then add 16 ounces heavy cream, 2 ounces sour cream, and 3 ounces plain yogurt. Blend everything until completely smooth, stopping occasionally to scrape down the sides of the blender for even mixing.
- Sweeten to taste: Gradually add 2 tablespoons of your chosen sweetener in small increments to the blended mixture. Blend after each addition and taste, repeating the process until achieving your preferred sweetness level.
- Chill the soup: Transfer the blended strawberry mixture into the refrigerator and chill it for about 30 minutes or until it’s cold and refreshing.
- Prepare to serve: Once chilled, take the blender out of the refrigerator and shake it well to reincorporate any separated ingredients. Then, pour the chilled soup evenly into serving bowls.
- Add fresh toppings and garnish: Divide the ½ pound of fresh sliced strawberries among the bowls. Optionally, garnish each serving with a dollop of whipped cream and fresh mint leaves for extra flavor and presentation. Serve immediately while cold.
