Instructions
- Prep the Pastry and Oven: Remove puff pastry from freezer and thaw at room temperature for 30 to 45 minutes. Preheat your oven to 400°F (204°C). Line two large baking sheets with parchment paper to prevent sticking.
- Prepare Strawberries: In a mixing bowl, combine the sliced strawberries with sugar and cornstarch. Stir gently to coat the berries evenly. Let this mixture sit at room temperature for 15 minutes to allow the juices to develop and thicken slightly.
- Make Cream Cheese Filling: In a separate bowl, beat the room temperature cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until the filling is silky and well combined. Taste and adjust sweetness or vanilla as desired.

- Assemble Danishes: Spoon about 1 tablespoon of cream cheese filling into the center of each puff pastry rectangle, staying within the scored border.
