Noodles

  • 16 ounces brown rice noodles

Sauce

  • 3 large cloves garlic (or 4-5 small cloves)
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil (olive oil recommended)
  • 2/3 cup creamy peanut butter
  • 4 tablespoons low sodium tamari or soy sauce
  • 1/3 to 1 cup hot water
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1-2 tablespoons sriracha
  • 1-2 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional, adjust for spice level)
  • Optional: 2 teaspoons chili garlic sauce

    • Crushed peanuts

Instructions

  1. Boil water: Bring a large pot of water to a rolling boil to prepare for cooking the noodles.
  2. Cook noodles: Add the brown rice noodles to the boiling water and cook according to the package instructions until tender. Drain and set aside.
  3. Sauté garlic: Finely mince the garlic cloves. Heat 1 tablespoon of oil (olive oil or preferred oil) in a sauté pan over low heat and add the garlic.
  4. Sauté until golden: Cook the garlic gently for about 2 minutes until golden brown and fragrant. Then add the freshly grated ginger and sauté for another 1 minute.
  5. Add sauce ingredients: Remove the pan from heat. Add the peanut butter, low sodium tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, and red pepper flakes to the pan. Start by adding 1/3 cup of hot water and whisk thoroughly until the sauce is smooth and creamy. Add more hot water a little at a time to reach your preferred sauce consistency.
  6. Taste and adjust: Taste the sauce and adjust seasoning by adding more soy sauce for saltiness, sriracha for heat, or maple syrup/honey for sweetness as desired.
  7. Combine sauce with noodles: Add about half of the prepared sauce to the cooked noodles and toss to coat evenly.
  8. Adjust sauce quantity: Depending on your preference, add more sauce to the noodles gradually until coated to your liking. Some prefer it saucier while others prefer less sauce.
  9. Serve: Plate the noodles and garnish with crushed peanuts, chopped scallions, and additional red pepper flakes if desired. Serve alongside your choice of vegetables or protein for a complete meal. Enjoy!
