Ingredients
3/4 cup warm whole milk
2 1/4 teaspoons active dry yeast
2 tablespoons honey
3 large eggs
3 1/2–4 cups all-purpose flour, plus more for rolling
1 teaspoon kosher salt
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/4 cup freshly grated parmesan cheese
1/3 cup chopped fresh Italian herbs (sage, oregano, basil, thyme)
2 cloves garlic, grated
Instructions
- In a stand mixer bowl, combine warm milk, yeast, and honey. Let sit for 5–10 minutes until bubbly.
- Add eggs, 3 1/2 cups flour, and salt. Mix with the dough hook for 4–5 minutes. Add more flour as needed until smooth.
- Cover and let rise at room temperature for 1 hour or until doubled in size.
- In a bowl, combine cheddar, mozzarella, parmesan, herbs, and garlic.
- Punch down the dough and roll into a 12×18-inch rectangle. Sprinkle cheese mixture evenly over dough.
- Roll into a tight log starting from the long edge. Pinch to seal the seam.
- Cut the log lengthwise, keeping one end intact. Twist the halves together and coil into a circle.
- Transfer to a parchment-lined baking sheet. Cover and let rise for 15 minutes.
- Preheat oven to 350°F (175°C). Bake for 30–35 minutes until golden brown. Serve warm.
Notes
- You can prep the dough and shape the bread in advance. Refrigerate and bring to room temperature before baking.
- Use fresh herbs for maximum flavor, but dried herbs can be substituted if needed.
- Best served warm to enjoy the gooey cheese texture.
- Freezes well after baking—wrap tightly and reheat before serving.
