Ingredients
Brisket and Seasonings
- 1 medium-large beef brisket (about 5 pounds)
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 2 teaspoons salt
- ½ teaspoon black pepper
Honey BBQ Sauce
- ½ cup ketchup
- ½ cup molasses
- 4 tablespoons honey
- 2 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 1 teaspoon garlic powder
- ⅓ cup apple cider vinegar
Thickening Mixture
- 2 tablespoons cold water
- 1 tablespoon cornstarch
Instructions
- Prepare the Slow Cooker and Brisket: Lightly grease your slow cooker to prevent sticking, then place the beef brisket inside the cooker basin.
- Make the BBQ Sauce: In a small bowl, whisk together ketchup, molasses, honey, brown sugar, Worcestershire sauce, Dijon mustard, garlic powder, and apple cider vinegar until fully combined. Set the sauce aside.
- Season the Brisket: In another small bowl, mix the garlic powder, chili powder, salt, and black pepper. Rub this seasoning mixture all over the brisket to ensure it is evenly coated with flavor.
- Cook the Brisket: Pour the prepared BBQ sauce over the seasoned brisket in the slow cooker. Cover with the lid and cook on the low setting for 10 hours. This long, slow cook will make the brisket tender and flavorful.
- Make the Sauce Thicker: Once the brisket is done, carefully pour the cooking liquid from the slow cooker into a large saucepan. Heat it over medium-high heat until it starts to boil.
- Prepare the Slurry and Thicken Sauce: In a small bowl, stir together the cold water and cornstarch until the cornstarch dissolves completely. Slowly pour this mixture into the boiling sauce while stirring continuously. Reduce the heat to medium-low and keep stirring until the sauce thickens. Remove from heat.
- Shred the Brisket: Use two forks to shred the cooked brisket directly in the slow cooker. Pour the thickened barbecue sauce back over the shredded meat and stir well to coat evenly.
- Serve Hot: Serve the honey BBQ beef brisket hot, ideal for pairing with sides like mashed potatoes, coleslaw, or cornbread for a complete meal.
Notes
- For best results, select a brisket with even fat marbling to enhance flavor and tenderness.
- Do not skip the thickening step for the sauce; it transforms the cooking liquid into a rich, glossy BBQ sauce.
- You can make this dish a day ahead; flavors deepen when refrigerated overnight.
- If you prefer spicier BBQ, add a pinch of cayenne pepper or hot sauce to the seasoning or sauce.
- Leftover brisket is perfect for sandwiches or tacos the next day.
