Shrimp and Macaroni Salad is a creamy, refreshing dish that combines tender shrimp, pasta, eggs, and celery in a tangy dressing. Perfect for potlucks, picnics, or as a light meal, it can be served warm or chilled.

Ingredients

2 pounds (910 g) shrimp, preferably small

1 (16-ounce/455 g) box macaroni noodles, cooked according to package instructions

6 hard-boiled eggs, roughly chopped

3 tablespoons sweet pickle relish

1 cup (100 g) diced celery

1 cup (240 ml) mayonnaise

2 tablespoons mustard

2 teaspoons celery salt

Instructions

  1. Peel, wash, and devein the shrimp, removing the tails.
  2. In a saucepan, bring 3 cups (720 ml) of water to a boil. Add shrimp and cook until pink and opaque, about 2–4 minutes. Drain and set aside.
  3. In a large bowl, combine macaroni, shrimp, eggs, relish, and celery.
  4. Stir in mayonnaise, mustard, and celery salt until evenly mixed.
  5. Serve immediately for a warm salad, or refrigerate and serve chilled.

Notes

  • Add chopped red onions or bell peppers for crunch and color.
  • Swap mayonnaise with Greek yogurt for a lighter version.
  • Use dill pickles instead of sweet relish for a tangier taste.
