This easy Sheet Pan Baked Salmon and Potatoes recipe offers a flavorful and healthy one-pan meal perfect for busy weeknights. Tender baby potatoes are seasoned and roasted to perfection alongside succulent Cajun-spiced salmon fillets, all finished with melted butter and fresh lemon for a bright, delicious finish.

  • Total Time: 37 minutes
  • Yield: 4 servings

Ingredients

Potatoes

  • 1 lb baby potatoes
  • 2 tablespoons olive oil (divided)
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons garlic powder (divided)
  • 1 teaspoon Italian seasoning

Salmon

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper (for seasoning)
  • 2 to 3 teaspoons Cajun seasoning
  • 2 tablespoons butter
  • 1 lemon (for serving)

Instructions

  1. Prepare Potatoes: Wash the potatoes thoroughly and pat dry with a kitchen towel. Cut them lengthwise in half and then quarter them to ensure all pieces are roughly the same size for even cooking.
  2. Season Potatoes: In a large mixing bowl, combine 3 tablespoons of olive oil, salt, 1 teaspoon of garlic powder, and Italian seasoning. Add the quartered potatoes and toss thoroughly to coat each piece evenly with the seasoning mixture.
  3. Preheat Oven: Line a baking sheet with parchment paper. Preheat your oven to 425°F (220°C) to get it ready for roasting the potatoes and salmon.
  4. Start Baking Potatoes: Spread the seasoned potatoes evenly on the lined baking sheet and bake in the preheated oven for 15 minutes to begin roasting them.
  5. Prepare Salmon: While potatoes bake, pat salmon fillets dry with paper towels. Sprinkle 1 to 2 teaspoons of Cajun seasoning over each fillet depending on your desired spice level. Optionally, drizzle 1 tablespoon olive oil and season with salt and pepper.
  6. Add Salmon to Baking Sheet: After the potatoes have baked for 15 minutes, remove the pan from the oven. Move the potatoes aside and place the seasoned salmon fillets in the center of the pan.
  7. Bake Salmon and Potatoes: Return the baking sheet to the oven and cook for another 10 to 12 minutes, until the salmon flakes easily with a fork and the potatoes are tender and golden.
  8. Finish and Serve: Remove the pan from the oven. Place a half tablespoon of butter on each salmon fillet, allowing it to melt on top. Squeeze fresh lemon juice over the salmon and serve together with the roasted potatoes on the side for a complete meal.

Notes

  • Ensure the potatoes are cut to similar sizes for even roasting.
  • Adjust Cajun seasoning to your spice preference, starting with less if unsure.
  • Using parchment paper helps prevent sticking and makes cleanup easier.
  • Check salmon doneness by ensuring it flakes easily with a fork but is still moist inside.
  • Fresh lemon juice brightens up the dish and balances the spicy Cajun seasoning.
