Ingredients
Chicken and Marinade
- 400 g chicken thighs, cut into small pieces
- 2 tablespoons soy sauce
- 1/2 tablespoon dark soy sauce
- 1/2 tablespoon oyster sauce
- 1/2 teaspoon black pepper powder (adjust to taste)
- 2 tablespoons corn starch
Vegetables and Cooking
- 2 cups scallions, chopped (separate white parts from green parts)
- 4 tablespoons oil (vegetable or preferred cooking oil)
Instructions
- Preparing: In a bowl, combine the chicken thigh pieces with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch. Mix well to coat all the chicken evenly and marinate for 10 minutes. Meanwhile, chop the scallions, separating the white parts from the green parts for staggered cooking.
- Pan frying chicken: Heat oil in a non-stick pan over medium heat. Add the marinated chicken pieces and pan fry until the chicken is fully cooked, about 6-8 minutes. Stir occasionally to ensure even cooking and prevent sticking.
- Adding scallions: Add the white parts of the scallions to the pan with the chicken and cook until softened, about 2-3 minutes. If the chicken pieces are larger or bone-in, cover the pan with a lid and cook for a few extra minutes until thoroughly cooked. Finally, add the green parts of the scallions and stir-fry for 10-20 seconds until just wilted.
- Serving: Remove from heat and optionally sprinkle additional black pepper or scallions on top. Serve immediately with steamed rice or noodles for a complete meal.
Notes
- Food safety: Ensure the chicken is completely cooked through to avoid any risk of foodborne illness. Larger pieces or bone-in chicken require longer cooking times.
