This Roasted Radishes recipe transforms simple radishes into a flavorful, golden-brown side dish perfect for any meal. Roasting mellows the radishes’ natural peppery bite, enhanced with garlic, herbs, and a touch of ghee or butter for a rich finish. Serve as a healthy vegetable side or snack with optional ranch dressing and fresh herbs for added zest.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Vegetables

  • 1 lb. fresh globe radishes, stems removed, ends trimmed, and halved
  • 2 garlic cloves, finely minced

Seasonings & Fats

  • 1 tablespoon melted ghee or butter
  • ½ teaspoon fine salt
  • ⅛ teaspoon black pepper
  • ¼ teaspoon dried parsley, dried chives, or dried dill (or a mix of all)

Optional for Serving

  • Ranch dressing for drizzling
  • Garnish of fresh parsley, dill, or chives

Instructions

  1. Preheat Oven: Set your oven to 425℉ (220℃) to prepare for roasting the radishes to a golden crisp.
  2. Toss Radishes with Seasoning: In a mixing bowl, combine halved radishes, melted ghee or butter, dried herbs, salt, and black pepper. Toss thoroughly to ensure radishes are evenly coated; hold off on adding minced garlic until a later step.
  3. Arrange in Baking Dish: Spread the seasoned radishes evenly in a single layer within a 9×13-inch baking dish to ensure even roasting.
  4. Begin Roasting: Place the dish in the oven and roast for 10 minutes.
  5. Add Garlic and Toss: After the initial 10 minutes, add the finely minced garlic to the radishes and toss well to incorporate the garlic flavor evenly.
  6. Continue Roasting: Return the dish to the oven and roast for an additional 10 to 15 minutes. Toss the radishes every 10 minutes to promote uniform browning. Bake until radishes are golden brown and fork-tender.
  7. Serve and Garnish: Remove from the oven and serve warm. Optionally, drizzle with ranch dressing and garnish with fresh parsley, dill, or chives to elevate the flavor and presentation.

Notes

  • Do not add minced garlic at the beginning to prevent burning and bitterness; add after initial roasting.
  • You can substitute melted butter if ghee is unavailable.
  • For a dairy-free option, use olive oil instead of ghee or butter.
  • Adjust roasting time based on your oven and desired crispiness; radishes should be fork-tender but not mushy.
  • Serve immediately for best taste and texture.
