Ingredients

2 cloves garlic, minced

1 yellow onion, diced

2 Tbsp olive oil

1 lb ground beef

1 (15 oz) can kidney beans, drained

1 (15 oz) can black beans, drained

1 (15 oz) can petite diced tomatoes

1 (15 oz) can pumpkin purée

1/2 (6 oz) can tomato paste (5 Tbsp)

2 cups water

1 Tbsp chili powder

1/2 tsp smoked paprika

1 tsp ground cumin

1/4 tsp garlic powder

1/2 tsp onion powder

1/4 tsp freshly cracked black pepper

1 tsp salt

Instructions

  1. Mince garlic and dice onion. Add to a large pot with olive oil and sauté over medium heat until onions are tender, about 5 minutes.
  2. Add ground beef and cook until browned and fully cooked.
  3. Add kidney beans, black beans, diced tomatoes (with juices), pumpkin purée, tomato paste, water, and all spices to the pot. Stir well to combine.
  4. Cover and bring to a simmer. Simmer for 30 minutes, stirring occasionally.
  5. Taste and adjust salt if needed. Serve hot with your favorite toppings like cheese, sour cream, green onions, or corn chips.
