Pizza Base
- ½ recipe homemade pizza dough (enough for a 12-inch circle)

- 6 ounces cooked ribeye, skirt, or flank steak, or roast beef (see notes for cooking instructions)
- ½ green bell pepper, sliced
- 3-5 mushrooms, sliced
- ½ sweet onion, thinly sliced
- 3 teaspoons oil (optional, for sautéing veggies)
- 1¼ cups shredded cheese (mozzarella or provolone preferred)
Instructions
- Prepare and Rest the Dough: Position a rack in the center of your oven and preheat it to 475ºF. Roll out your homemade pizza dough into a 12-inch circle. Create a lip by thickening the dough around the edges to keep the sauce from spilling over. Allow the dough to rest for 15-20 minutes while you prepare the sauce.
- Make the Garlic Parmesan Sauce: In a small saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until it smells like baked pie dough. Slowly whisk in the cold milk, ensuring no lumps form. Add the pressed garlic and bring the sauce to a gentle simmer. Season with salt, black pepper, and nutmeg. Remove from heat and whisk in the parmesan cheese. Let the sauce cool for 5-10 minutes while preparing the veggies.
- Prepare the Vegetables: You may use the veggies raw if you prefer, but for enhanced flavor, heat a skillet with 1 teaspoon of oil. Sauté the onions, peppers, and mushrooms separately for a couple of minutes each, using a total of 3 teaspoons of oil. Optionally, cook the onions longer on low heat to sweeten them further.
- Assemble the Pizza: Spread the cooled garlic parmesan sauce evenly over the rested dough. Arrange the cooked steak slices evenly over the sauce. Distribute the sautéed bell peppers, mushrooms, and onions on top. Sprinkle the shredded mozzarella or provolone cheese generously over all toppings.
- Bake the Pizza: Place the pizza in the preheated oven and bake for 12-15 minutes or until the crust turns lightly browned and the cheese becomes bubbly and golden. For an extra bubbly and golden top, switch the oven to broil during the last minute of baking, watching closely to prevent burning.
- Serve: Remove the pizza from the oven, slice it into 8 pieces, and serve hot for a delicious Philly Cheese Steak Pizza experience.
Notes
- If using raw steak cuts, cook them to medium rare or desired doneness before topping the pizza. Slice thinly against the grain for tenderness.
- The sauce is similar to a garlic béchamel and can be made ahead of time to save prep time.
- Using provolone cheese closely mimics traditional Philly cheesesteak flavors, but mozzarella works well too.
- Letting the dough rest after shaping ensures a better crust texture and prevents shrinking.
- Adjust garlic quantity in the sauce based on your preference, 1-3 cloves works well.
