Instructions
- If desired, grill the peach slices for 2–3 minutes per side on a hot grill or grill pan for a smoky flavor.
- Fill a rocks glass with ice.
- In a cocktail shaker or jar, muddle together the peach slices, thyme, and lemon juice until the juices are released.
- Add the peach jam and bourbon (or apple cider and vanilla extract for mocktail), then shake or stir to combine.
- Strain the mixture into the prepared glass.
- Top with ginger beer and gently stir.
- Garnish with extra thyme or basil. Serve immediately.
