Ingredients

1/2 cup fresh peach slices

4 sprigs fresh thyme

1 to 2 tablespoons peach jam or peach preserves

1 tablespoon lemon juice

2 ounces bourbon

Ginger beer, for topping

Mocktail Version:

1/2 cup fresh peach slices

4 sprigs fresh thyme

1/4 cup apple cider

1/4 teaspoon vanilla extract

Instructions

  1. If desired, grill the peach slices for 2–3 minutes per side on a hot grill or grill pan for a smoky flavor.
  2. Fill a rocks glass with ice.
  3. In a cocktail shaker or jar, muddle together the peach slices, thyme, and lemon juice until the juices are released.
  4. Add the peach jam and bourbon (or apple cider and vanilla extract for mocktail), then shake or stir to combine.
  5. Strain the mixture into the prepared glass.
  6. Top with ginger beer and gently stir.
