Ingredients

1 cup white sugar

7 cups water (divided)

1 ¼ cups freshly squeezed lemon juice (strained)

4 ripe peaches, peeled and pitted

Instructions

  1. Make the simple syrup: In a saucepan, combine sugar with 1 cup water. Heat over medium, stirring until dissolved. Remove from heat and let cool.
  2. Juice lemons: Squeeze enough lemons to yield 1 ¼ cups juice. Strain out pulp and seeds. Pour into a large pitcher with 6 cups cold water.
  3. Blend peaches: Puree peeled, pitted peaches in a blender until smooth. Add a splash of water if needed to blend.
  4. Combine: Stir the peach puree and cooled simple syrup into the pitcher. Mix well.
  5. Chill and serve: Adjust sweetness if needed. Serve over ice and garnish with peach slices.

  • Peel peaches for a smooth puree; leave skins on for more fiber and color.
