Ingredients

2 large sweet potatoes

150 g goat cheese (log or fresh)

2 tbsp honey

1 tbsp olive oil

Fresh thyme (optional)

Salt and freshly ground black pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Wash and scrub sweet potatoes, then cut in half lengthwise.
  3. Place cut-side up on a parchment-lined baking tray. Brush with olive oil and season with salt and pepper.
  4. Roast for 25–30 minutes, until tender and slightly caramelized.
  5. Top each half with goat cheese slices, drizzle with honey, and return to oven for 5 minutes until cheese softens.
  6. Garnish with fresh thyme if desired and serve immediately.
