Ingredients
2 large sweet potatoes
150 g goat cheese (log or fresh)
2 tbsp honey
1 tbsp olive oil
Fresh thyme (optional)
Salt and freshly ground black pepper
Instructions
- Preheat oven to 200°C (400°F).
- Wash and scrub sweet potatoes, then cut in half lengthwise.
- Place cut-side up on a parchment-lined baking tray. Brush with olive oil and season with salt and pepper.
- Roast for 25–30 minutes, until tender and slightly caramelized.
- Top each half with goat cheese slices, drizzle with honey, and return to oven for 5 minutes until cheese softens.
- Garnish with fresh thyme if desired and serve immediately.
Notes
- Add crushed walnuts or pecans for crunch.
- Swap goat cheese with feta or blue cheese for variation.
- Top with avocado or drizzle with yogurt-pesto sauce for freshness.
- Store leftovers up to 2 days in fridge; reheat in oven at 180°C (350°F) for 10 minutes.
