Ingredients

2 cups all-purpose flour

1 cup buttermilk

½ cup unsalted butter, melted and divided

2 large eggs

½ cup packed brown sugar

4 nectarines, sliced into -inch wedges

Instructions

  1. Preheat oven: Set to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, whisk flour, granulated sugar, baking soda, and salt.
  3. Mix wet ingredients: In another bowl, combine buttermilk, 4 Tbsp melted butter, and eggs. Stir into dry ingredients until just moistened.
  4. Prepare pan: In a 9-inch cake pan or cast iron skillet, pour remaining 4 Tbsp melted butter and swirl to coat. Sprinkle brown sugar evenly over bottom.
  5. Arrange fruit: Layer nectarine slices evenly over the sugar-butter base.
  6. Add batter: Spoon cake batter over nectarines and smooth top.
  7. Bake: Bake ~45 minutes or until a toothpick inserted in the center comes out clean.
  8. Invert: Cool 5–10 minutes, run a knife around edges, and invert onto a serving plate.
