Lemonade:

Instructions
- Make the lemon simple syrup: In a small saucepan, combine sugar and water. Simmer over medium heat, stirring until the sugar dissolves. Add lemon zest, cover, and let steep for 1 hour. Strain and discard zest. Refrigerate if making ahead.
- Prepare the lemonade: In a blender, combine ½ cup lemon simple syrup, lemon juice, coconut milk, and ice. Blend until smooth and slushy.
- Pour into 4 glasses and serve immediately.
