No reviews

This whipped frozen lemonade is creamy like a milkshake yet light and refreshing like classic lemonade. Made with fresh lemon juice, homemade lemon simple syrup, full-fat coconut milk, and ice, it’s a frosty, dairy-free summer drink with the perfect balance of tart and sweet.

  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings

Ingredients

Lemon Simple Syrup:

½ cup granulated sugar

½ cup water

Zest of 1 lemon

Lemonade:

½ cup freshly squeezed lemon juice (from 2 lemons)

1 cup full-fat coconut milk

2 ½ cups ice cubes

Instructions

  1. Make the lemon simple syrup: In a small saucepan, combine sugar and water. Simmer over medium heat, stirring until the sugar dissolves. Add lemon zest, cover, and let steep for 1 hour. Strain and discard zest. Refrigerate if making ahead.
  2. Prepare the lemonade: In a blender, combine ½ cup lemon simple syrup, lemon juice, coconut milk, and ice. Blend until smooth and slushy.
  3. Pour into 4 glasses and serve immediately.

Notes

  • Use light or refrigerated coconut milk for a lighter drink.
  • Add frozen berries or mango for a fruity variation.
  • Stir in vodka, rum, or tequila for a cocktail version.
  • Swap coconut milk with oat or almond milk.
  • Add a pinch of sea salt for flavor depth.
  • Try honey or agave instead of simple syrup for sweetness.
