Ingredients

Energy Ball Mixture

  • ¾ cup raw cashews
  • ¼ cup raw shelled pistachios
  • 12 pitted Medjool dates
  • ¼ cup unsweetened shredded coconut
  • 2 teaspoons matcha powder
  • 1 tablespoon coconut oil

For Rolling

  • ¼ cup roughly chopped pistachios

Instructions

  1. Blend. Place the cashews, pistachios, Medjool dates, shredded coconut, matcha powder, and coconut oil into a food processor. Process for about one minute, or until the mixture is finely chopped and well blended into a sticky but manageable dough.
  2. Scoop and make balls. Using a medium cookie scoop, portion the mixture into balls. Roll each portion between your hands to create evenly sized, smooth balls.
  3. Roll in pistachios. After shaping all the balls, roll them through the roughly chopped pistachios, pressing gently to ensure the nuts stick well to the surface of each ball for a crunchy texture.
  4. Chill. Place the energy balls in the refrigerator for at least 15 minutes to firm up slightly. Once chilled, enjoy immediately or store in an airtight container for later snacking.
