Energy Ball Mixture
- ¾ cup raw cashews
- ¼ cup raw shelled pistachios
- 12 pitted Medjool dates
- ¼ cup unsweetened shredded coconut
- 2 teaspoons matcha powder
- 1 tablespoon coconut oil
For Rolling
- ¼ cup roughly chopped pistachios
Instructions
- Blend. Place the cashews, pistachios, Medjool dates, shredded coconut, matcha powder, and coconut oil into a food processor. Process for about one minute, or until the mixture is finely chopped and well blended into a sticky but manageable dough.
- Scoop and make balls. Using a medium cookie scoop, portion the mixture into balls. Roll each portion between your hands to create evenly sized, smooth balls.
- Roll in pistachios. After shaping all the balls, roll them through the roughly chopped pistachios, pressing gently to ensure the nuts stick well to the surface of each ball for a crunchy texture.
- Chill. Place the energy balls in the refrigerator for at least 15 minutes to firm up slightly. Once chilled, enjoy immediately or store in an airtight container for later snacking.
Notes
- For best results, use Medjool dates as they are soft and naturally sweet.
- You can substitute the cashews with almonds or walnuts for a different flavor profile.
