Potatoes
- 2.5 pounds potatoes, russet or Yukon gold (peeled and cubed)

- 1 cup whole milk
- 4 tbsp butter
- 4 oz mascarpone cheese (approximately 1/2 cup)
- 1/4 cup parmesan cheese (finely grated)

- 1 tsp kosher salt (or to taste)
- 1 tsp ground black pepper (or to taste)
- 1 tbsp fresh thyme
Instructions
- Prepare Potatoes: Peel and dice the potatoes into 1-inch cubes. Place the diced potatoes in a colander and rinse them thoroughly with cold water to remove excess starch.
- Boil Potatoes: Transfer the diced potatoes to a large saucepan and add enough cold water to cover them by about 1 inch. Bring the water to a boil over high heat and cook the potatoes for about 15 minutes or until they are tender when pierced with a fork.
- Heat Milk and Butter: While the potatoes are cooking, gently heat the whole milk and butter together in a small saucepan over low heat. Stir occasionally until the butter is fully melted and combined with the milk.
- Drain and Mash Potatoes: Drain the cooked potatoes in a colander and rinse briefly under running water to cool slightly. Return the drained potatoes to the large pot and mash them using a stick blender, ricer, or traditional masher until smooth and creamy.
- Add Dairy and Seasonings: Stir the warmed milk and butter mixture into the mashed potatoes. Then fold in the mascarpone cheese, finely grated Parmesan, fresh thyme, kosher salt, and ground black pepper. Mix gently but thoroughly to combine all ingredients evenly.
- Adjust Seasoning and Serve: Taste the mashed potatoes and add additional salt or pepper if needed. Serve the mascarpone mashed potatoes warm as a rich and satisfying side dish.
Notes
- Using russet potatoes will give a fluffier texture, whereas Yukon gold will make it creamier.
- Ensure the milk and butter mixture is warm when adding to keep the potatoes hot and smooth.
- For extra richness, add a splash of cream or a little more mascarpone.
- Fresh thyme can be substituted with rosemary or chives based on preference.
- Do not over-mash the potatoes to avoid a gummy texture.
