Instructions
- Prepare Garlic: Finely mince the garlic cloves to release their full flavor and place them in a bowl or jar.
- Add Ingredients: To the minced garlic, add tahini, olive oil, fresh lemon juice, salt, Dijon mustard, and maple syrup.
- Add Water Gradually: Start by adding ¼ cup of water to the mixture to begin thinning the dressing.
- Mix Thoroughly: Shake the jar vigorously or whisk the ingredients together until fully combined into a smooth dressing.
- Adjust Consistency: Add the remaining 2 tablespoons of water, and if necessary, more in small increments, to achieve your desired consistency, especially if your tahini is thick.
- Taste and Modify: Taste your dressing and adjust the flavors by adding more maple syrup if you want it sweeter or more lemon juice for extra tanginess.
- Serve: Drizzle over your favorite salads or vegetables and enjoy immediately.
Notes
- Use a runny tahini like Soom Foods or the 365 brand from Whole Foods for best consistency. If using a thicker tahini, add more water as needed to thin the dressing.
- This dressing keeps well in the refrigerator for up to a week; shake or stir before using.
