Instructions

  1. Prepare the bananas: Peel the bananas and break them up in a bowl. Use a fork or a masher to crush the bananas until they form a smooth, soft texture.
  2. Make the batter: Add the plain flour, sugar, vanilla extract, nutmeg, ground cinnamon, and a pinch of salt to the mashed bananas. Mix everything together until you form a soft paste similar in consistency to pancake batter, but slightly thicker and not too runny.
  3. Heat the oil: Pour enough cooking oil into a frying pan to cover the bottom but not submerge the fritters. Heat the oil over medium heat until it is hot and shimmering but not smoking.
  4. Fry the fritters: Using a tablespoon, scoop portions of the banana batter and carefully add them to the hot oil. Fry the fritters on each side until they turn golden brown and are cooked through on the inside, approximately 2-3 minutes per side. Adjust the heat as needed to prevent burning.
