This simple yet flavorful dish is perfect as a refreshing appetizer or side, showcasing the best of Italian flavors in just minutes of preparation and a brief marination in the fridge.

  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings

Ingredients

Salad Ingredients

  • 3 Beefsteak tomatoes, sliced 1/3 inch thick

Marinade

  • 4 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • 1/2 Tablespoon lemon juice
  • 3 Tablespoons minced red onion
  • 4 large leaves fresh basil, finely diced
  • 1 Tablespoon diced fresh parsley
  • 1 clove garlic, crushed
  • 1/2 teaspoon fine sea salt
  • Fresh ground pepper, to garnish

Instructions

  1. Prepare Tomatoes: Slice the beefsteak tomatoes into 1/3 inch thick slices and arrange them in a single layer on a platter with a rim to catch the marinade.
  2. Make Marinade: In a bowl, whisk together olive oil, red wine vinegar, lemon juice, minced red onion, finely diced basil and parsley, crushed garlic, and fine sea salt until well combined.
  3. Marinate Tomatoes: Pour the marinade evenly over the arranged tomato slices, ensuring all slices are well covered and distributing the herbs and onion evenly over the top.
  4. Refrigerate: Cover the platter and place it in the refrigerator for at least one hour to allow the tomatoes to absorb the flavors of the marinade.
  5. Serve: Just before serving, garnish the marinated tomatoes with freshly ground pepper for a final touch of flavor.

Notes

  • Use ripe, fresh beefsteak tomatoes for the best flavor and texture.
  • Adjust the amount of lemon juice and vinegar to your taste preference for acidity.
  • Marinate for at least one hour; longer marination will deepen the flavors.
  • This salad is best served chilled as a refreshing starter or side dish.
  • Can be paired well with crusty bread or grilled meats.
