Ingredients
2 oz dark chocolate (60–70% cocoa), finely chopped
2 tbsp unsweetened cocoa powder
2 tbsp sugar (adjust to taste)
1 cup milk (2% or whole, divided)
1 tsp cornstarch
Instructions
- In a small bowl, whisk ¼ cup milk with cornstarch until smooth. Set aside.
- In another bowl, sift cocoa powder and whisk together with sugar. Set aside.
- Heat remaining ¾ cup + 1 tbsp milk in a medium pot until it just comes to a boil. Reduce heat to low.
- Whisk in the milk-cornstarch mixture, followed by the cocoa-sugar mixture. Continue whisking until smooth.
- Add chopped dark chocolate and whisk for about 3 minutes, or until melted and thickened to a velvety texture.
- Pour into mugs and serve immediately while hot.
Notes
- Simmer longer for an extra-thick, pudding-like version.
- Use high-quality dark chocolate for the richest flavor.
- Drink will thicken slightly as it cools.
- Best enjoyed fresh but can be stored and reheated.
