Instructions
- Prepare Potatoes: Peel and slice the potatoes into medium-sized pieces to ensure even and quick cooking in the Instant Pot.
- Add Potatoes and Water: Place the peeled and sliced potatoes into the bottom of the Instant Pot. Pour enough water to cover the potatoes completely, approximately 4-5 cups, and add 1 teaspoon of salt to the water for seasoning.
- Seal the Instant Pot: Secure the lid on the Instant Pot and ensure the valve is set to the sealing position to prepare for pressure cooking.
- Pressure Cook: Set the Instant Pot to manual pressure cooking mode for 8 minutes. This cooks the potatoes quickly and thoroughly.
- Turn Off and Release Pressure: When the cooking time is complete, turn off the Instant Pot. Perform a quick pressure release by carefully turning the valve to vent, releasing all the steam.
- Drain Potatoes: Open the lid safely once the pressure is fully released. Drain the potatoes in a colander to remove excess water, then return them to the Instant Pot insert.
- Add Flavorings: To the hot potatoes, add the remaining 1 teaspoon salt, pepper, garlic powder, butter, milk, and sour cream. These ingredients enrich the potatoes with creamy texture and savory flavor.
- Mash the Potatoes: Mash the potatoes inside the Instant Pot using a potato masher or fork until smooth and well combined.
- Serve: Optional – top with fresh chopped parsley for color and extra flavor. Serve immediately as a delightful side dish.
